David & Peter Willes make all the cheese using a traditional
farmhouse approach. The process is very much "hands on" with full manual control
of each individual vat of cheese enabling closer attention to detail. This allows
creation of cheese with distinctive flavour and texture which could not be achieved through mass production. Microbial rennet is used for all vats to ensure that cheese is suitable for vegetarians.

Parkham Farms have achieved Product of Designated Origin (PDO) status with their
Westcountry Farmhouse Cheddar. To use this name, the product has to meet with
specific criteria laid down by the Ministry of Agriculture, Fisheries & Food (MAFF). These
criteria include being made within the Westcountry (Devon, Cornwall, Dorset, Somerset),
the use of local milk and the authentic method of on-farm "cheddaring" by hand. This PDO status is a guarantee to the consumer that the product being purchased is a true Westcountry Farmhouse Cheddar.
