Milk is collected daily from our own 1500 cows and from a further 33 local farmers. All farms producing conventional milk are located within a 10-mile radius of the dairy, so it is very much a local effort. Every farm is audited against the National Dairy Farm Assured Scheme Standards on a regular basis to ensure that incoming milk is of the premium quality required for farmhouse cheesemaking.
