When it comes to the white stuff, we get through a lot. It takes a whopping 10,000 litres of milk to make one tonne of cheese. But we believe it’s better when it’s local. Which is why every single drop of milk we use is sourced from within a 14 mile radius. It doesn’t get fresher than that.
Of course, to get lots of milk you need lots of cows. It takes around 6,000 to keep us supplied, 400 of which live right here on our dairy farm. The rest are from carefully selected neighbouring farms. We take great care to make sure they are all extremely well looked after. They have plenty of room to explore the North Devon countryside as well as their very own sand bed to lie down on. After all, happy cows make great milk. And great milk makes great cheese.
To help ensure our cheese is consistently tasty, we make sure every farm we work with is fully in-check with national dairy farm standards. In fact, the contracts we have with our partners reward farms for maintaining tip-top cow conditions. Maybe that’s why we still have exactly the same milk partners onboard as we have had since day one.
